October is Pumpkin Season!
Our local outdoor produce market’s stands of apples, pears, plums, green, red and yellow veggies, varieties of squash and potatoes, are now dwarfed by pumpkins spilling out of a nearby shed. A sea of bright orange in a multitude of sizes – ginormous, large, small, and mini. The produce bounty in the stands was a clear sign of fall. The waterfall of pumpkins is unmistakable.
While a colorful addition to fall displays across lawns and on porches, pumpkins are also considered highly nutritious, containing fiber, potassium, magnesium, folate, vitamin C, vitamin A and zinc.
So as fall moves through October, enjoy the fruits of the fields and delicious recipes to take advantage of the benefits of pumpkin.
