July is National Blueberry Month! Though small in size, blueberries pack a big punch when it comes to health benefits.
Blueberries are low in calories but high in nutrients, clocking in at only 84 calories in a 1 cup serving. Considered one of the most nutrient-dense berries, this serving also contains 4g Fiber, 24% of your daily Vitamin C and 36% of your daily Vitamin K. Blueberries are also an excellent source of anthocyanins, an antioxidant compound with several proven beneficial health effects.
Among strawberries, blackberries and raspberries, blueberries also score low on the glycemic index (53)- making them a great addition to your low-sugar diet. We’ve developed some delicious recipes that celebrate this strong-but-mighty berry for you to enjoy this July and year-round.
Blueberry Spinach Smoothie
This recipe calls for frozen blueberries, but we believe in going with fresh whenever possible! To add some additional ‘chill’ to your smoothie, freeze your banana for 30 minutes before blending or toss in a couple ice cubes. For a little extra nutrition we toss in a handful of spinach and high-protein greek yogurt!
