Watermelon- A Fun, Refreshing, Summer Treat!

 

Peak watermelon season is imminent. Let’s have some fun with the perfect summer fruit to enjoy on a warm summer day! It’s sweet, it hydrates (at 92% water!), and it tastes soooo refreshing.

Watermelon is the fun fruit of summer. What other food do you let drip down your chin and not care? Have you ever separated the seeds inside their mouth and slipped them into your cheek to spit sleek, rapid-fire projectiles at unsuspecting friends? Or held a “Who can spit a seed the farthest contest”? The most entertaining moments I recall at picnics as a kid were when a spit seed stuck to a friend’s face. Do kids still have that much fun with watermelon? I hope so.

You know the folks living in “The Watermelon Capital of the World”, Cordele, Georgia, where over 200 million pounds of melons are grown each year, whoop it up at the annual Watermelon Days Festival. I sure hope they have watermelon eating and spitting contests.

Watermelon is low in calories (46 per cup) and a good source of Vitamins A & C as well as lycopene (which may help reduce or prevent high blood pressure). The melon carries some carbs (11.5g per cup), but that’s just 1/3 the number of carbs in a 12 ounce soda. Still, you don’t want to eat the whole melon – and it’s best enjoyed shared with friends.

Other than straight from off the rind, we’ve been LOVING sipping on this zero-sugar added agua fresca: 

llinea™ Watermelon Agua Fresca 

Ingredients

1 mini-seedless watermelon, cubed (about 4 cups) 

2 cups water 

2 full limes, juiced

⅛ teaspoon llinea™monk fruit 

Mint (optional)  

Steps

-Place all ingredients in a blender, blend until smooth

-Strain into a pitcher 

-Serve over ice with a lemon wedge or sprig of mint
